Easy Mediterranean-Inspired Air Fryer Pork Bowls
A greek salad, salty seasoned meat, and rice. What could be easier and more delicious.
This recipe is quick, simple, and has everything you need for a complete, well-balanced meal: vegetables, protein, carbs, and….cheese.
I wanted something easy to go with a Greek salad, so I quickly seasoned some pork, threw it in the air fryer, heated up some rice, and created these bowls!
This recipe is well-loved in our household and I hope you enjoy it as much as we do!
Mediterranean Air Fryer Pork Bowl Recipe
Serves: 2.
Ingredients:
Cooked rice
For the pork chops:
2 boneless pork chops, cut into ½ inch cubes (you could also use chicken, steak, or salmon)
¾ teaspoon salt
¾ teaspoon ground black pepper
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
For the salad:
1 small cucumber, cut into ¼ inch cubes
1 red bell pepper, cut into ¼ inch slices
¼ cup red onion, diced
½ cup Roma tomato, diced
¼ cup feta
For the dressing:
⅓ cup extra-virgin olive oil, or avocado oil
¼ cup red or white wine vinegar
1 teaspoon honey
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon Dijon mustard
½ teaspoon dried or fresh oregano
What To Do:
Combine all salad ingredients.
Combine all dressing ingredients.
Add ¼ cup of the dressing to the salad and toss.
Combine all pork seasonings in a small bowl. Sprinkle seasoning over your cut pork chops and mix to combine well. Depending on how small your pork chops are, you might not need all of the seasoning. Discard any remaining.
Air fry at 380° F for ~6-8 minutes until golden brown and cooked through.
Oven Instructions: Bake at 375° F for ~6-8 minutes, stirring halfway, until golden brown and cooked through.
Pan Instructions: Cook over medium heat for ~6-8 minutes, until cooked through and no longer pink on the inside.
Add ½ cup rice, half of the salad, and a serving of pork to each bowl. Top your bowl with more feta and more salad dressing if you prefer.
